1.5 lbs boneless, skinless chicken thighs

1 lb baby potatoes, halved

4 tbsp unsalted butter

5 cloves garlic, minced

2 tsp dried thyme

1 tsp smoked paprika

Salt and pepper to taste

2 cups fresh spinach

1 lemon, juiced

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs on both sides with salt, pepper, thyme, and smoked paprika. Set aside.

    Cook the Potatoes: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the halved baby potatoes to the skillet and cook for about 10-12 minutes, stirring occasionally, until they start to become golden brown and tender.

      Add Chicken: Push the potatoes to one side of the skillet and add the seasoned chicken thighs to the other side. Cook for about 5-6 minutes on each side until the chicken is browned and cooked through (internal temperature of 165°F).

        Make the Garlic Butter: Once the chicken and potatoes are cooked, reduce the heat to low and add the remaining 2 tablespoons of butter and minced garlic. Stir everything together until the garlic is fragrant, about 1-2 minutes.

          Finish the Dish: Add the fresh spinach and lemon juice to the skillet, stirring until the spinach wilts. Taste and adjust seasoning with more salt and pepper if needed.
