For the Chicken Marinade:

2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sriracha (or more for extra heat)

1 teaspoon garlic powder

1 teaspoon freshly grated ginger

For the Ramen:

4 cups chicken broth

2 packs of ramen noodles (discard the seasoning packets)

1 cup shiitake mushrooms, sliced

1 cup baby spinach

2 green onions, chopped

2 soft-boiled eggs (optional)

For the Creamy Garlic Sauce:

3 tablespoons mayonnaise

1 tablespoon Greek yogurt

2 cloves garlic, minced

1 teaspoon lemon juice

Salt and pepper to taste

1 teaspoon paprika (for color)

Garnish:

Red pepper flakes

Fresh cilantro or basil leaves

Instructions
 

Marinate the Chicken:

    - In a bowl, mix the soy sauce, sesame oil, sriracha, garlic powder, and grated ginger. Add the chicken thighs and coat well. Let marinate for at least 30 minutes.

      Cook the Chicken:

        - Heat a skillet over medium heat. Remove chicken from the marinade and cook for about 7-8 minutes per side, or until fully cooked and golden brown. Let it rest for a few minutes before slicing into strips.

          Prepare the Creamy Garlic Sauce:

            - In a small bowl, combine mayonnaise, Greek yogurt, minced garlic, lemon juice, salt, pepper, and paprika. Whisk until smooth and set aside.

              Cook the Ramen:

                - In a large pot, bring chicken broth to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes.
