2 boneless, skinless chicken thighs

2 tablespoons Sriracha sauce (adjust to taste)

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

4 cups chicken broth

2 packs of instant ramen noodles (discard flavor packets)

1 cup mushrooms, sliced (shiitake or button)

1 cup baby spinach

2 green onions, chopped

2 soft-boiled eggs (optional)

1 tablespoon chopped cilantro (for garnish, optional)

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lime juice

Salt and pepper, to taste

Instructions
 

Marinate the Chicken: In a bowl, combine chicken thighs with Sriracha, soy sauce, sesame oil, and garlic powder. Allow it to marinate for at least 30 minutes in the refrigerator.

    Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and let it rest for 5 minutes before slicing.

      Prepare the Broth: In a large pot, bring the chicken broth to a boil. Add the sliced mushrooms and cook for about 3 minutes until they soften.

        Cook the Noodles: Add the ramen noodles to the boiling broth and cook according to package instructions, usually around 3-4 minutes.

          Add Spinach: Stir in the baby spinach and let it wilt for about a minute.

            Make the Creamy Garlic Sauce: In a small bowl, combine mayonnaise, minced garlic, lime juice, salt, and pepper. Mix well and adjust seasoning to taste.
