8 ounces fettuccine or your favorite pasta

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta cooking liquid, then drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until softened.

        Combine Ingredients: Stir in the baby spinach and cook until wilted. Then, add the heavy cream, grated Parmesan cheese, and Italian seasoning. Mix well and let it simmer for about 2-3 minutes until slightly thickened.

          Mix in the Chicken and Pasta: Return the cooked chicken to the skillet and add the drained pasta. Toss everything together, adding reserved pasta water as needed to reach your desired sauce consistency. Adjust seasoning with more salt and pepper, if desired.
