EASY STUFFED BELL PEPPERS

4 large bell peppers (any color)

1 cup cooked quinoa

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, canned, or frozen)

1 medium red onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or a Mexican blend)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

      Cook the Aromatics: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion and minced garlic until the onion becomes translucent, about 3-4 minutes.

        Mix the Filling: In the skillet, add the cooked quinoa, black beans, corn, cumin, chili powder, smoked paprika, diced tomatoes, and half of the cheese. Season with salt and pepper to taste. Stir until well combined and heated through, around 5 minutes.

          Stuff the Peppers: Carefully spoon the filling into each bell pepper, packing it tightly.

            Top with Cheese: Sprinkle the remaining cheese on top of each stuffed pepper.

              Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is melted and bubbly.

                Serve: Allow the stuffed peppers to cool for a few minutes before serving. Enjoy your delicious and healthy stuffed bell peppers!
