Easy Spinach & Ricotta Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 tsp garlic powder

1/2 tsp nutmeg

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and let them cool slightly.

      Prepare the Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, 1/4 cup Parmesan cheese, the egg, garlic powder, nutmeg, salt, and pepper. Stir until fully combined.

        Stuff the Shells: Take a spoonful of the spinach and ricotta mixture and carefully stuff each cooked shell. Place the stuffed shells seam side up in a baking dish.

          Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they’re all covered. Sprinkle the remaining mozzarella and Parmesan cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

              Garnish and Serve: Allow the dish to cool for a few minutes, then garnish with fresh basil leaves if desired. Serve warm and enjoy!
