Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Jumbo pasta shells are stuffed with a creamy mixture of fresh spinach, ricotta, and mozzarella, all enhanced with garlic and Italian herbs. Ingredients
  

20 jumbo pasta shells

2 cups fresh spinach, chopped

15 oz ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, chopped spinach, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper. Mix until all ingredients are well incorporated.

        Stuff the Shells: Carefully fill each cooked pasta shell with the ricotta and spinach mixture using a spoon or a piping bag.

          Assemble the Dish: Spread about 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells seam side up in the dish. Pour the remaining marinara sauce over the shells and sprinkle the remaining mozzarella cheese on top.

            Bake the Shells: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

              Garnish & Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired, then serve warm.
