Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Ingredients
  

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Boil the Pasta: In a large pot, bring salted water to a boil. Cook jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a mixing bowl, combine chopped spinach, ricotta cheese, half of the shredded mozzarella, grated Parmesan, egg, minced garlic, oregano, salt, and black pepper. Stir until well combined.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Stuff the Shells: Carefully take each pasta shell and fill it with about 2 tablespoons of the spinach and ricotta mixture. Place the stuffed shells opening side up in a greased 9x13-inch baking dish.

          Add Marinara Sauce: Pour marinara sauce evenly over the stuffed shells, making sure each shell is covered. Top with the remaining shredded mozzarella cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Let the shells cool for a few minutes. Garnish with fresh basil leaves if desired, and serve warm.
