4 slices of thick bread (Brioche or Challah works best)

2 large eggs

1/2 cup milk (whole or your choice)

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

2 tablespoons sugar (brown sugar for added flavor is preferred)

2 tablespoons butter

1/4 cup maple syrup (for serving)

1 banana, sliced (optional)

Fresh berries for garnish (optional)

Instructions
 

In a medium bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined. Set aside.

    Preheat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the surface.

      Dip each slice of bread into the egg mixture, making sure to coat both sides evenly. Allow excess batter to drip off.

        Place the soaked bread slices in the skillet, cooking for about 2-3 minutes on each side or until golden brown.

          Once both sides are golden, sprinkle a little extra sugar (about 1 teaspoon) on top of each slice to encourage caramelization. Carefully flip the slices and cook for an additional minute, allowing the sugar to melt and caramelize.

            Repeat the process with the remaining slices, adding more butter as necessary.

              Serve immediately, drizzled with maple syrup and topped with banana slices and fresh berries, if desired.
