Easy Cowboy Butter Chicken Linguine

300g linguine pasta

2 large chicken breasts, diced

4 tablespoons unsalted butter

2 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust for spice preference)

1 cup heavy cream

½ cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped

Salt and pepper, to taste

Zest and juice of 1 lemon

Instructions
 

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced chicken, season with salt, pepper, paprika, onion powder, and cayenne pepper, and cook until golden brown and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté until fragrant and golden, about 1-2 minutes.

        Make it Creamy: Stir in the heavy cream and bring to a gentle simmer. Cook for 2-3 minutes until the cream begins to thicken.

          Add Cheese and Seasoning: Stir in the grated Parmesan cheese until melted. If the sauce is too thick, add reserved pasta water little by little until desired consistency is reached.

              Finish: Remove from heat and stir in lemon zest and chopped parsley for freshness.
