2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 tablespoons chipotle ranch dressing (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen, thawed)

1 cup shredded cheese (cheddar or a Mexican blend)

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Extra chipotle ranch dressing, for drizzling

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, chipotle ranch dressing, garlic powder, smoked paprika, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes to 1 hour in the refrigerator to infuse the flavors.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

      Prepare the Tortillas: Warm the flour tortillas on the grill for about 30 seconds on each side until they're pliable.

        Assemble the Burrito: On each tortilla, layer 1/4 of the cooked rice, black beans, corn, sliced grilled chicken, shredded cheese, and avocado. Drizzle some extra chipotle ranch dressing on top, if desired.

          Roll the Burrito: Fold the sides of the tortilla over the filling, then roll the bottom up to close it tightly. Continue to roll until fully wrapped.

            Serve: Serve the burritos warm, garnished with chopped cilantro and a side of extra chipotle ranch dressing for dipping.
