Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

1 cup cooked rice (white or brown)

1 can black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup shredded cheese (cheddar or Monterey Jack)

½ cup chipotle ranch dressing (store-bought or homemade)

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate Chicken: In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Add chicken breasts, ensuring they are well coated. Let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

Grill Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing into strips.

Prepare the Burrito Filling: In a large bowl, mix cooked rice, black beans, corn, half of the shredded cheese, and chipotle ranch dressing. Adjust seasoning if needed.

Assemble the Burritos: On a large tortilla, layer a portion of the rice mixture, sliced grilled chicken, and top with the remaining cheese. Fold in the sides and roll tightly from the bottom up to enclose the filling.

Grill the Burrito: Place the burrito seam-side down on the grill for about 2-3 minutes per side until the tortillas are crispy and the cheese is melted.

Serve: Cut burritos in half, garnish with fresh cilantro and serve with lime wedges on the side.
