2 large cucumbers, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon honey (or agave syrup for a vegan option)

1 teaspoon sesame oil

1 teaspoon chili paste (adjust to taste)

1 garlic clove, minced

2 green onions, finely chopped

1 tablespoon sesame seeds (toasted, optional)

Fresh cilantro for garnish

Prepare the Cucumbers: Rinse the cucumbers thoroughly and slice them thinly using a sharp knife or mandolin for even thickness. If the cucumbers are very watery, you may want to salt them lightly and let them sit for about 10 minutes, then pat them dry with a paper towel.
