1.5 lbs boneless, skinless chicken thighs

1 cup uncooked basmati rice

2 cups chicken broth

1 medium cucumber, grated

1 cup plain Greek yogurt

2 tablespoons fresh lemon juice

2 teaspoons minced garlic

1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

1 cup cherry tomatoes, halved (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Preheat the oven to 400°F (200°C). In a large baking dish, place the chicken thighs in a single layer. Sprinkle with salt, pepper, and smoked paprika if using.

    Add Rice: Pour the uncooked basmati rice evenly over the chicken.

      Mix Broth: In a separate bowl, mix the chicken broth and half of the dill. Pour the broth over the rice and chicken ensuring it’s evenly distributed.

        Make Tzatziki Sauce: In another bowl, combine the grated cucumber, Greek yogurt, lemon juice, garlic, the remaining dill, salt, and pepper. Stir until well blended and set aside.

          Bake: Cover the baking dish tightly with foil and bake in the preheated oven for 40-45 minutes, until the chicken is cooked through and the rice is tender.
