4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened

3 cloves garlic, minced

1 tsp dried oregano

1/2 tsp black pepper

1/2 tsp salt

1/4 cup sun-dried tomatoes, chopped (optional)

1/2 cup breadcrumbs (optional for topping)

1 tbsp olive oil

Fresh lemon juice (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Prepare the filling: In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, dried oregano, black pepper, salt, and sun-dried tomatoes if using. Mix well until all ingredients are evenly incorporated.

      Prepare the chicken: Using a sharp knife, cut a pocket into each chicken breast. Make sure not to cut all the way through. The pocket should be large enough to fill with the spinach and feta mixture.

        Stuff the chicken: Generously fill each chicken breast pocket with the spinach and feta filling. You can use toothpicks to secure the opening if necessary.

          Optional breadcrumb topping: If you like a crispy topping, mix breadcrumbs with a tablespoon of olive oil in a small bowl. Sprinkle this mixture over the stuffed chicken breasts.
