Ingredients
  

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup ricotta cheese

1/2 cup feta cheese, crumbled

1/2 cup sun-dried tomatoes, chopped

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese

2 tablespoons olive oil

Juice of 1 lemon

1/4 cup grated Parmesan cheese

Instructions
 

Preheat your oven to 375°F (190°C) and grease a baking dish with cooking spray or olive oil.

    In a mixing bowl, combine the ricotta cheese, feta cheese, chopped spinach, sun-dried tomatoes, basil, garlic, oregano, salt, and pepper. Mix well until all ingredients are well incorporated to form a filling.

      Using a sharp knife, carefully slice a pocket into each chicken breast, ensuring not to cut all the way through.

        Stuff each chicken breast with the cheese and spinach mixture, packing it in gently.

          In a separate small bowl, combine the olive oil and lemon juice. Brush the mixture over the stuffed chicken breasts.

            Sprinkle the stuffed breasts with shredded mozzarella and grated Parmesan cheese for a delicious crust.

              Arrange the chicken breasts in the prepared baking dish and cover with foil. Bake in the oven for 25 minutes.
