For the Chicken Cordon Bleu:

4 boneless, skinless chicken breasts

8 slices of thinly sliced ham (preferably smoked)

8 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Olive oil or butter, for frying

For the Creamy Swiss Cheese Sauce:

1 cup heavy cream

1 cup shredded Swiss cheese

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Prepare the Chicken: Preheat your oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap or parchment paper. Pound lightly with a meat mallet until about ½ inch thick.

    Assemble the Cordon Bleu: Lay 2 slices of ham and 2 slices of Swiss cheese on each chicken breast. Carefully roll each breast tightly, starting from the thicker end. Secure with toothpicks or kitchen twine, and set aside.

      Breading Process: In three separate shallow dishes, place the flour in one, beaten eggs in the second, and the breadcrumbs mixed with garlic powder, paprika, salt, and pepper in the third. Dredge each rolled chicken breast first in flour, then dip into the egg, and finally coat with the breadcrumb mixture, ensuring they're well covered.

        Fry the Chicken: In a large skillet over medium heat, add olive oil or butter. Once hot, add the breaded chicken rolls and cook for about 4-5 minutes on each side, or until golden brown. Transfer to a baking dish and bake in the preheated oven for 15-20 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C).

          Prepare the Creamy Swiss Cheese Sauce: In a saucepan over medium heat, melt butter. Whisk in the flour and cook for one minute, until bubbling. Gradually add the heavy cream while whisking continuously to avoid lumps. Cook until the sauce thickens, then reduce heat to low.

            Stir in the Dijon mustard, followed by the shredded Swiss cheese until melted and smooth. Season with salt and pepper to taste.

              Serve: Remove the chicken from the oven, let it rest for a couple of minutes, and then slice into rounds if desired. Plate the chicken rolls and drizzle the creamy Swiss cheese sauce over them. Garnish with chopped parsley if using.
