500g beef sirloin, thinly sliced against the grain

2 tablespoons cornflour (cornstarch)

1 tablespoon all-purpose flour

1 teaspoon bicarbonate of soda (baking soda)

1 teaspoon salt

½ teaspoon black pepper

1 large red chilli, sliced (adjust to taste)

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons sweet chilli sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

3 cloves garlic, minced

2 tablespoons vegetable oil (for frying)

1 bell pepper (any color), sliced

1 onion, sliced

Fresh coriander (cilantro), for garnish

Sesame seeds, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef, soy sauce, rice vinegar, minced garlic, and sesame oil. Let it marinate for at least 30 minutes. This helps tenderize the meat and infuse flavor.

    Prepare the Coating: In another bowl, mix the cornflour, all-purpose flour, bicarbonate of soda, salt, and black pepper. This will create a crispy coating for the beef.

      Heat the Oil: In a large frying pan or wok, heat the vegetable oil over medium-high heat until it’s shimmering but not smoking.

        Coat the Beef: Remove the marinated beef from the bowl and toss it in the flour mixture until well coated. Shake off any excess flour.

          Fry the Beef: Carefully add the coated beef to the hot oil in small batches. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the beef and drain on paper towels.

            Sauté the Vegetables: In the same pan, add sliced onion and bell pepper. Stir-fry for about 2-3 minutes until they start to soften. Add the sliced red chilli for a nice kick.

              Combine with Sauce: In a small bowl, mix together the sweet chilli sauce and oyster sauce. Pour this mixture over the sautéed vegetables. Add the crispy beef back into the pan and toss until everything is coated in the sauce.

                Serve: Plate the crispy chilli beef and garnish with fresh coriander and sesame seeds. Serve hot with steamed rice or noodles.
