Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb fresh salmon fillet, skin removed and cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

3 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

Vegetable oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1 tablespoon Sriracha (adjust for spice level)

1 tablespoon honey

1 teaspoon rice vinegar

1 teaspoon lime juice

1 teaspoon sesame oil

Instructions
 

Prepare the Bang Bang Sauce: In a mixing bowl, combine the mayonnaise, Sriracha, honey, rice vinegar, lime juice, and sesame oil. Whisk together until smooth. Adjust seasoning to taste and set aside.

    Set Up the Breading Station: In three separate bowls, place the flour in one, beaten eggs in the second, and a mixture of panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper in the third.

      Bread the Salmon Bites: Take a piece of salmon, coat it lightly in flour, dip it in the beaten eggs, and then coat it with the panko breadcrumb mixture. Make sure each piece is well coated and set aside on a plate.

        Heat the Oil: In a large skillet or frying pan, heat about 1/2 inch of vegetable oil over medium heat until hot but not smoking (about 350°F/175°C).

          Fry the Salmon Bites: Carefully add the breaded salmon bites to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the bites and place them on a paper towel-lined plate to drain excess oil.

            Serve: Arrange the crispy salmon bites on a serving platter and drizzle or serve alongside the Bang Bang sauce for dipping. Garnish with sliced green onions or sesame seeds if desired.
