Crispy Bang Bang Chicken

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup panko breadcrumbs

Vegetable oil (for frying)

For the Bang Bang Sauce:

¼ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon lime juice

1 teaspoon honey

Pinch of salt

Prepare the Chicken: In a large bowl, combine the chicken pieces with buttermilk, garlic powder, paprika, salt, and pepper. Mix well, cover, and let marinate in the fridge for at least 30 minutes (or up to 2 hours for extra flavor).

    Set Up Breading Station: In one shallow dish, place the flour. In a second shallow dish, place the panko breadcrumbs.

      Coat the Chicken: Remove the marinated chicken from the fridge. Dredge each piece first in flour, shaking off excess, then dip in the remaining buttermilk, and finally coat with panko breadcrumbs. Ensure each piece is completely covered.

        Fry the Chicken: Heat about 2 inches of vegetable oil in a large, deep skillet over medium-high heat until it reaches 350°F (175°C). Carefully add the breaded chicken in batches (do not overcrowd the pan) and fry until golden brown and cooked through, about 5-7 minutes per batch. Remove and drain on paper towels.

          Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, honey, and a pinch of salt until smooth and well combined.

            Serve: Toss the crispy chicken pieces in a mixing bowl with half of the Bang Bang sauce. Serve remaining sauce on the side for dipping. Enjoy your crispy and spicy delight!
