Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp paprika

2 large eggs, beaten

2 cups panko breadcrumbs

Vegetable oil, for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to spice preference)

1 tsp lime juice

Fresh cilantro, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Chicken: In a bowl, combine the flour, salt, black pepper, garlic powder, and paprika. Dredge the chicken pieces in the seasoned flour, shaking off any excess.

Egg Wash: In a separate bowl, pour the beaten eggs. Dip the flour-coated chicken pieces into the egg wash, ensuring they are fully coated.

Bread the Chicken: In a third bowl, place the panko breadcrumbs. Coat each egg-washed chicken piece with the panko, pressing gently to adhere the breadcrumbs well.

Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom by about 1/2 inch. Heat the oil over medium-high heat until shimmering.

Fry the Chicken: Fry the chicken pieces in batches, being careful not to overcrowd the pan. Cook for about 4-5 minutes on each side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels to absorb excess oil.

Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth and well combined.

Toss and Serve: Once all chicken pieces are fried, place them in a large mixing bowl. Drizzle the Bang Bang sauce over the chicken and toss gently to coat.

Garnish: Serve the crispy Bang Bang Chicken hot, garnished with chopped cilantro and a sprinkle of sesame seeds.
