Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (more or less to taste)

1 tablespoon lime juice

Fresh cilantro, for garnish (optional)

Instructions

Marinate the Chicken:

    - Place the cut chicken pieces in a bowl and pour the buttermilk over them. Make sure all pieces are coated well. Let it marinate in the refrigerator for at least 30 minutes; this will help tenderize the chicken.

      Prepare the Coating:

        - In one bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well.

          - In a second bowl, place the panko breadcrumbs.

            Coat the Chicken:

              - Remove the marinated chicken from the refrigerator. One piece at a time, dredge each chicken piece in the flour mixture, shaking off excess, then dip into the breadcrumbs, ensuring that each piece is fully coated. Set aside on a plate.

                Fry the Chicken:

                  - In a large frying pan or deep fryer, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). Carefully add the chicken pieces in batches to avoid overcrowding the pan. Fry until golden brown and crispy, about 4-6 minutes. Use a slotted spoon to transfer the fried chicken onto a paper towel-lined plate to drain excess oil.

                    Make the Bang Bang Sauce:

                      - In a mixing bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until well mixed.

                        Serve:

                          - Place the crispy chicken on a serving plate. Drizzle or toss with the Bang Bang sauce. Garnish with fresh cilantro if desired. Serve immediately while hot alongside extra sauce for dipping!
