8 oz penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, sliced into strips

8 oz fresh mushrooms, sliced (cremini or button)

1 bunch asparagus, trimmed and cut into 2-inch pieces

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat olive oil. Add the sliced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the mushrooms and asparagus. Sauté for about 3-4 minutes until the mushrooms are tender and the asparagus is bright green. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Simmer for about 5 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

          Combine: Return the cooked chicken to the skillet and add the drained penne pasta. Toss everything together until well coated in the creamy sauce. Heat through for another 2-3 minutes.

            Garnish and Serve: Remove from heat, garnish with chopped parsley, and serve immediately while hot.
