Creamy Garlic Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken or vegetable broth

1 cup grated Parmesan cheese

2 tbsp olive oil

2 tbsp butter

1 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1 lemon

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Sauté the Shrimp: In a large skillet over medium-high heat, add the olive oil and butter. Once the butter is melted and bubbly, add the shrimp in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on each side until they are pink and opaque. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken or vegetable broth and bring to a simmer, scraping any bits off the bottom of the skillet.

        Make it Creamy: Lower the heat and whisk in the heavy cream, followed by the Parmesan cheese. Stir until the cheese has melted and the sauce is nice and creamy. If the sauce is too thick, add reserved pasta water, a little at a time, until the desired consistency is reached. Add lemon zest and juice, and adjust seasoning with salt, pepper, and red pepper flakes if desired.

          Combine Everything: Add the cooked fettuccine and the sautéed shrimp back into the skillet, tossing until everything is well coated in the sauce.
