1 lb (450g) rotini pasta

2 boneless, skinless chicken breasts

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup spinach (optional)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and fully cooked (internal temperature should reach 165°F/75°C). Remove from the skillet and let rest for a few minutes before slicing.

        Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant (be careful not to burn the garlic).
