Creamy Chicken Sausage Orzo Skillet

1 lb chicken sausage, sliced

1 cup orzo pasta

4 cups low-sodium chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups baby spinach

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese for serving

Fresh basil leaves for garnish (optional)

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Sauté Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3-5 minutes. Then add the minced garlic and cook for another minute until fragrant.

      Add the Orzo: Stir in the orzo pasta and Italian seasoning, cooking for an additional minute to toast the pasta lightly.

        Introduce Liquid: Pour in the chicken broth, stirring well to combine. Bring it to a gentle simmer and cook uncovered, stirring occasionally, until the orzo is tender and most of the liquid is absorbed, about 10-12 minutes.

          Make It Creamy: Reduce the heat to low and stir in the heavy cream, cherry tomatoes, and baby spinach. Cook until the spinach wilts and everything is heated through, about 3-5 minutes.

            Combine and Season: Return the cooked chicken sausage to the skillet, stirring to combine. Season with salt and pepper to taste. Let it simmer for a couple of minutes to meld the flavors.

              Serve: Remove from heat and serve warm. Top with grated Parmesan cheese and fresh basil leaves for an extra burst of flavor.
