Creamy Chicken Bacon Ranch Pasta – The Ultimate Comfort Food!

8 oz. fettuccine or pasta of choice

1 lb. boneless, skinless chicken breasts, diced

6 slices of bacon, chopped

2 cups heavy cream

1 cup chicken broth

1 packet (1 oz) ranch seasoning mix

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 cups fresh spinach

2 cloves garlic, minced

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to remove the bacon, leaving the drippings in the skillet, and set the bacon aside on a paper towel.

      Sauté the Chicken: In the same skillet, add the diced chicken to the bacon drippings. Season with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken and set aside.

        Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Whisk in the ranch seasoning mix until fully incorporated. Allow the sauce to simmer for about 3-5 minutes until it slightly thickens.

          Combine Ingredients: Lower the heat and add the grated Parmesan cheese, stirring until melted and creamy. Fold in the fresh spinach and cherry tomatoes, allowing them to cook for a couple of minutes until the spinach wilts.

            Combine the Pasta: Add the cooked pasta and crispy bacon to the skillet, tossing everything to coat in the creamy ranch sauce. Allow to heat through on low for another 2 minutes. Adjust seasoning with more salt and pepper if needed.
