Creamy Cajun Chicken Pasta

8 oz fettuccine or penne pasta

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 tbsp Cajun seasoning (adjust to taste)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside.

    Season the Chicken: In a large bowl, toss the chicken pieces with Cajun seasoning, salt, and black pepper until evenly coated.

      Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken and cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the diced onion and cook for 2-3 minutes until translucent. Add the minced garlic and sliced bell pepper, cooking for another 3-4 minutes until the peppers are tender.

          Make the Sauce: Reduce the heat to low. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer, allowing the sauce to thicken slightly.

            Combine Everything: Add the cooked chicken back into the skillet, along with the cooked pasta. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Stir in the grated Parmesan cheese until melted and creamy.

              Season and Serve: Taste and adjust seasoning with additional salt, pepper, or Cajun seasoning as desired. Remove from heat and garnish with freshly chopped parsley.
