Creamy Broccoli and Chicken Penne

8 ounces penne pasta

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, diced

2 cloves garlic, minced

2 cups fresh broccoli florets

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Penne: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the diced chicken breasts and season with salt and pepper. Cook for about 5-7 minutes, until the chicken is browned and cooked through. Remove the chicken from the skillet and set it aside.

      Sauté Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the broccoli florets and stir-fry for about 3-4 minutes until they are vibrant green and slightly tender.

        Make the Sauce: Pour in the heavy cream and chicken broth, stirring well to combine. Bring the mixture to a simmer. Add the Italian seasoning and season with additional salt and pepper.

          Combine: Once the sauce thickens slightly, add the cooked chicken back into the skillet along with the penne pasta. Toss everything together until the pasta is well coated in the creamy sauce. Stir in the grated Parmesan cheese until melted and incorporated.
