Ingredients

1 lb flank steak

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper

Salt and pepper, to taste

8 slider buns

1 cup shredded cheddar cheese

1/2 cup Cowboy Butter (recipe below)

1 cup arugula or baby spinach

1 large tomato, sliced

Pickled jalapeƱos (optional)

For the Cowboy Butter:

1/2 cup unsalted butter, softened

2 tbsp fresh parsley, chopped

1 tbsp fresh chives, chopped

1 tbsp Dijon mustard

1 clove garlic, minced

1 tsp Worcestershire sauce

1/2 tsp hot sauce (adjust to taste)

Salt and pepper, to taste

Instructions

Make the Cowboy Butter: In a bowl, combine softened butter, chopped parsley, chives, Dijon mustard, minced garlic, Worcestershire sauce, hot sauce, salt, and pepper. Mix until well blended. Transfer to a piece of parchment paper, shape into a log, and refrigerate until firm.

Prepare the Steak: Pat the flank steak dry with paper towels. Season both sides generously with garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.

Cook the Steak: Preheat a grill or skillet over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from heat and let it rest for 5 minutes before slicing thinly against the grain.

Toast the Slider Buns: While the steak rests, split the slider buns and lightly toast them on the grill or in a toaster oven until golden brown.

Assemble the Sliders: On each toasted slider bun, spread a generous dollop of Cowboy Butter. Layer on slices of steak, sprinkle shredded cheddar cheese, add a handful of arugula or spinach, a slice of tomato, and pickled jalapeƱos if using. Top with the other half of the bun.

Serve: Arrange sliders on a platter, serve warm, and enjoy the burst of flavors!
