Cinnamon Sugar French Toast Muffins

Ingredients
  

6 cups of day-old bread, torn into small pieces (preferably brioche or challah)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/3 cup granulated sugar

2 teaspoons vanilla extract

2 teaspoons ground cinnamon

1/4 teaspoon nutmeg (optional)

1/2 teaspoon salt

1/2 cup raisins or chocolate chips (optional)

1/4 cup unsalted butter, melted

For topping:

1/2 cup granulated sugar

2 teaspoons ground cinnamon

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.

    Prepare Bread: In a large mixing bowl, combine the torn bread pieces with the melted butter. Toss to coat the bread evenly. Set aside.

      Make Custard: In another bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg (if using), and salt until well combined.

        Combine: Pour the custard mixture over the bread pieces. Gently fold the ingredients together to ensure all the bread is soaked but don’t over-mix. If using, fold in the raisins or chocolate chips.

          Fill Muffin Tin: Scoop the mixture into the prepared muffin tin, filling each cup about 3/4 full.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are puffed up and golden brown on top.

              Make Cinnamon Sugar Topping: While the muffins are baking, combine the sugar and cinnamon in a small bowl and set aside.

                Coat Muffins: Once baked, allow the muffins to cool for a few minutes in the tin. While they’re still warm, remove them from the tin and roll each muffin in the cinnamon sugar mixture to coat them thoroughly.

                  Serve: Serve warm on their own or with maple syrup, whipped cream, or fresh fruits of your choice.
