Ingredients

2 boneless, skinless chicken breasts, sliced thinly

150g instant ramen noodles, uncooked

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

2 green onions, chopped

1 teaspoon chili paste (optional, adjust to taste)

Sesame seeds, for garnish

Fresh cilantro, for garnish

Instructions

Cook the Ramen: In a large pot of boiling water, cook the ramen noodles according to package instructions (about 3-4 minutes). Drain and set aside.

Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and chili paste (if using). Set aside.

Stir-Fry the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced chicken and cook for about 5-6 minutes, or until the chicken is golden brown and cooked through. Remove from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant. Add the sliced bell pepper, broccoli florets, and snap peas. Stir-fry for 3-4 minutes or until vegetables are tender yet crisp.

Combine Ingredients: Add the cooked chicken back into the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables, stirring to combine.

Add Ramen: Add the drained ramen noodles to the skillet. Toss everything together until the noodles are well-coated in the sauce and heated through (about 2 minutes).

Garnish and Serve: Remove from heat, and sprinkle chopped green onions, sesame seeds, and fresh cilantro over the top. Serve hot.
