Chicken Avocado Melt Sandwich

2 cups cooked chicken, shredded (grilled or rotisserie)

1 ripe avocado, mashed

1 cup shredded sharp cheddar cheese

1/2 cup mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

4 slices of whole grain bread (or bread of choice)

1 tomato, sliced

Fresh cilantro leaves (optional for garnish)

Butter or olive oil for toasting

Instructions
 

In a mixing bowl, combine the shredded chicken, mashed avocado, mayonnaise, lime juice, garlic powder, smoked paprika, salt, and pepper. Mix until well incorporated and creamy.

    Preheat a skillet over medium heat. Lightly butter one side of each slice of bread, or drizzle with olive oil.

      Place two slices of bread, buttered side down, in the skillet. Divide the chicken-avocado mixture evenly onto each slice and top with fresh tomato slices. Generously sprinkle shredded cheddar cheese over the fillings.

        Place the remaining bread slices on top, buttered side up. Cook for about 3-4 minutes or until golden brown.

          Carefully flip each sandwich and toast the other side for an additional 3-4 minutes until the cheese is melted and the bread is crispy.

            Remove from skillet, cut in half, and garnish with fresh cilantro if desired. Serve warm.
