Chicken Avocado Melt Sandwich

2 boneless, skinless chicken breasts

1 ripe avocado, peeled and pitted

1 tablespoon lime juice

1/4 teaspoon garlic powder

1/4 cup plain Greek yogurt

1/2 teaspoon cumin

Salt and pepper, to taste

4 slices of whole-grain bread

4 slices of provolone cheese (or cheese of choice)

1 medium tomato, sliced

1/4 cup fresh cilantro leaves (optional)

Olive oil for grilling

Instructions
 

Cook the Chicken: Season the chicken breasts with salt, pepper, and garlic powder. In a skillet over medium heat, add a drizzle of olive oil and cook the chicken for about 6-7 minutes per side, or until cooked through. Allow to rest for a few minutes, then slice the chicken into thin strips.

    Prepare the Avocado Spread: In a mixing bowl, mash the avocado with a fork. Add the lime juice, Greek yogurt, cumin, and additional salt and pepper to taste. Mix until smooth and well combined.

      Assemble the Sandwiches: Lay out the slices of bread on a clean surface. Spread a generous layer of the avocado mixture on two slices of the bread. Layer the sliced chicken on top, followed by a slice of tomato and a slice of provolone cheese. Sprinkle fresh cilantro over the cheese if using.

        Top and Grill: Place the remaining two slices of bread on top, creating two sandwiches. In the same skillet used for the chicken, add a little more olive oil and heat over medium-low. Grill the sandwiches for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
