1 can (15 oz) of mixed beans (kidney, black, and cannellini)

1 medium onion, finely chopped

2 cloves garlic, minced

1 green chilies, chopped (adjust based on heat preference)

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 teaspoon curry powder

1 teaspoon garam masala

1 teaspoon turmeric powder

1 cup shredded cheddar cheese

2 tablespoons olive oil

Salt to taste

Fresh cilantro for garnish

4 slices of crusty bread (sourdough or whole grain)

Prepare the Toast: Preheat your oven to 400°F (200°C). Place the slices of bread on a baking sheet and drizzle a little olive oil over them. Toast in the oven for about 5-7 minutes or until golden brown and crispy.
