1 can (10 oz) enchilada sauce (mild or medium heat)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, canned, or frozen)

12 ounces cheese tortellini

2 cups shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onion is translucent, about 3-4 minutes.

        Add Spices: Stir in the chili powder, cumin, salt, and pepper. Cook for another minute until fragrant.

          Incorporate Enchilada Sauce: Pour in the enchilada sauce, black beans, and corn. Mix well and simmer for 5 minutes until everything is heated through.

            Combine Flavors: Gently fold the cooked tortellini into the mixture, ensuring that it is evenly coated in sauce. Cook for another 2-3 minutes to warm everything together.
