Ingredients

6 medium-sized russet potatoes, peeled and diced

1 cup cooked and crumbled bacon

2 cups shredded cheddar cheese

1 cup milk

4 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup diced green onions (optional for garnish)

1/2 teaspoon paprika (optional for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and boil for about 8-10 minutes, or until slightly tender but still firm. Drain and set aside.

Cook the Bacon: If not already cooked, fry the bacon in a skillet over medium heat until crispy. Remove it from the skillet, let it cool, and crumbled it into small pieces.

Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

Combine Ingredients: In the greased baking dish, layer the cooked potatoes evenly at the bottom. Sprinkle half of the crumbled bacon over the potatoes, followed by a layer of cheddar cheese. Repeat the layers with the remaining bacon and cheese.

Pour the Egg Mixture: Carefully pour the egg mixture over the entire casserole, ensuring it distributes evenly throughout the layers.

Bake: Cover the casserole with aluminum foil and bake in the preheated oven for about 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the egg is set.

Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with diced green onions and paprika if desired. Cut into squares and serve warm.
