Carrot Cake Oatmeal

Ingredients
  

1 cup rolled oats

2 cups almond milk (or any milk of choice)

1 medium carrot, grated

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup raisins (or chopped dates for sweetness)

2 tablespoons chopped walnuts (or pecans)

1 tablespoon maple syrup (or honey)

1 teaspoon vanilla extract

Pinch of salt

Optional toppings: additional walnuts, shredded coconut, whipped cream, or maple syrup

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, ground cinnamon, nutmeg, and a pinch of salt.

    Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent sticking.

      Once boiling, reduce the heat to low and simmer for about 5-7 minutes, or until the oats have absorbed most of the liquid and are creamy in texture.

        Stir in the raisins, walnuts, maple syrup, and vanilla extract. Cook for an additional 1-2 minutes, allowing the flavors to meld together.

          Remove from the heat and let it sit for a minute. The oatmeal will thicken slightly as it cools.

            Serve warm in bowls, and top with additional walnuts, shredded coconut, or a drizzle of maple syrup if desired.
