For the Garlic Herb Potatoes:

1 lb baby potatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, dried oregano, salt, and pepper. Ensure they are evenly coated.

        - Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
