Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1/3 cup buffalo sauce (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded mozzarella cheese (optional for non-vegan)

1/4 cup fresh cilantro, chopped (for garnish)

1/2 cup Greek yogurt or vegan sour cream (for dipping)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Chickpeas: In a large mixing bowl, mash the chickpeas with a fork or potato masher, leaving some chunks for texture.

Mix the Filling: Add olive oil, buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and pepper to the mashed chickpeas. Stir well until everything is combined.

Assemble the Taquitos: Take a tortilla and place a generous spoonful of the chickpea mixture down the center. If you’re using cheese, sprinkle some on top of the chickpeas. Roll the tortilla tightly, folding in the sides as you go to secure the filling. Repeat with remaining tortillas.

Bake: Place the rolled taquitos seam-side down on the prepared baking sheet. Brush lightly with olive oil or spray with cooking spray for added crispness. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.

Serve: Once baked, remove from the oven and allow to cool slightly. Serve warm with cilantro sprinkled on top and a side of Greek yogurt or vegan sour cream for dipping.
