1/2 cup red bell pepper, diced

1/2 cup black olives, sliced

1/4 cup red onion, finely chopped

1 cup mozzarella balls (bocconcini), halved

1/3 cup fresh basil leaves, chopped

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Optional: Crushed red pepper flakes for added heat

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop cooking. Set aside.

Prepare the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper until well combined.

Mix the Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, black olives, red onion, mozzarella balls, and basil.

Dress the Salad: Pour the dressing over the pasta and vegetable mixture. Toss gently to combine, ensuring all ingredients are coated with the dressing.

Taste & Adjust: Taste the salad and adjust seasoning with additional salt, pepper, and optional crushed red pepper flakes if you like heat.

Chill & Serve: For best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. Toss again before serving.
