Biscuits and Chorizo Gravy

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk (or milk with a splash of lemon juice)

For the Chorizo Gravy:

1 pound chorizo sausage, casings removed

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Chopped fresh parsley for garnish

Instructions
 

Prepare the Biscuits:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Add the cold, cubed butter to the bowl, and using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

          - Pour in the buttermilk and gently stir until just combined. Do not overmix.

            - Turn the dough out onto a floured surface and knead it gently 2-3 times until it comes together. Pat the dough into a 1-inch thick rectangle and cut out biscuits using a round cutter. Place them on a baking sheet lined with parchment paper.

              - Bake for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

                Make the Chorizo Gravy:

                  - In a large skillet over medium heat, crumble and cook the chorizo for about 5-7 minutes until it's browned and cooked through.

                    - Sprinkle the flour over the cooked chorizo and stir until it's absorbed. Cook for an additional 1-2 minutes.

                      - Gradually pour in the milk while stirring continuously to avoid lumps.

                        - Add garlic powder, onion powder, salt, and pepper to taste. Continue to cook for about 5-7 minutes until the gravy thickens. If it gets too thick, you can add a little more milk to reach your desired consistency.

                          Serve:

                            - Split the warm biscuits in half and ladle the chorizo gravy over the top.

                              - Garnish with chopped parsley and serve immediately.
