1/2 cup water (adjust as needed)

1/2 teaspoon salt

1 tablespoon olive oil

For the Curry Broth:

1 tablespoon coconut oil

1 onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons red curry paste (adjust for spice preference)

4 cups vegetable or chicken broth

1 can (400ml) coconut milk

1 tablespoon soy sauce

1 tablespoon lime juice

1 cup spinach (or any leafy green)

Salt and pepper to taste

For Garnishing:

Chopped cilantro

Lime wedges

Sliced chili peppers (optional)

Instructions

Making the Dumplings:

    - In a bowl, mix the all-purpose flour and salt. Gradually add water while stirring to form a dough.

      - Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover and let rest for 20 minutes.

        - Roll the dough into small balls (about 1 inch) and flatten them slightly to shape the dumplings.

          Prepare the Curry Broth:

            - In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent (about 3-5 minutes).

              - Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

                - Add the red curry paste to the pot, mixing well with the onions and letting it cook for 2-3 minutes to release its flavors.

                  - Pour in the vegetable or chicken broth and coconut milk. Stir to incorporate everything, then bring the mixture to a simmer.

                    Cooking the Dumplings:

                      - Once boiling, gently add the dumplings into the broth. Reduce the heat and let them simmer for about 8-10 minutes or until they float to the top and are fully cooked.

                        - Add soy sauce and lime juice, followed by the spinach. Stir until the spinach wilts.

                          Finishing Touches:

                            - Season the soup with salt and pepper to taste.

                              Serving:

                                - Ladle the soup into bowls, making sure to include dumplings in each. Garnish with chopped cilantro, lime wedges, and sliced chili peppers if desired.
