Beef with Oyster Sauce

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons oyster sauce

1 tablespoon soy sauce

1 tablespoon cornstarch

2 teaspoons sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 red bell pepper, julienned

1 cup broccoli florets

3 green onions, chopped

Salt and pepper to taste

Marinate the Beef: In a bowl, combine the sliced beef, oyster sauce, soy sauce, cornstarch, and sesame oil. Mix well to ensure the beef is coated evenly. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for deeper flavor.

    Prepare the Stir-Fry: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant, being careful not to burn them.

      Cook the Beef: Add the marinated beef to the skillet in a single layer. Let it sear for about 2 minutes without stirring, then stir-fry for another 2-3 minutes until the beef starts to brown and is cooked through. Season with salt and pepper to taste. Remove the beef from the skillet and set it aside.

        Sauté the Vegetables: In the same skillet, add the broccoli florets and red bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp. If needed, add a splash of water to help them steam.

          Combine: Return the cooked beef to the skillet with the vegetables. Toss everything together over medium heat. Allow the mixture to cook for another minute to heat through and combine flavors.
