BBQ Chicken Quesadilla

Ingredients
  

2 cups cooked chicken, shredded or diced

1 cup BBQ sauce (your choice of flavor)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1/2 cup red onion, thinly sliced

1/2 cup bell peppers, diced (any color)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

Sour cream and guacamole, for serving

Prep the Chicken: In a medium mixing bowl, combine the shredded chicken with the BBQ sauce. Mix thoroughly until the chicken is well-coated.

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the sliced red onion and diced bell peppers. Sauté for about 3-4 minutes until they become tender. Remove from heat and set aside.

      Assemble the Quesadillas: Take a tortilla and layer on half of the tortilla with a generous portion of the BBQ chicken mixture, followed by a sprinkle of mozzarella and cheddar cheese, sautéed vegetables, and some chopped cilantro. Fold the tortilla in half.

        Cook the Quesadillas: In the same skillet, add a bit more olive oil if needed and place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side over medium heat, or until the tortillas are golden brown and the cheese is melted. Repeat with remaining tortillas.

          Slice and Serve: Remove the quesadillas from the skillet and let them rest for a minute. Cut each quesadilla into triangles and serve with sour cream and guacamole on the side.
