BBQ Chicken Grilled Cheese

Perfect for lunch or a quick dinner, this cheesy sandwich features savory shredded chicken mixed with your favorite barbecue sauce, combined with gooey mozzarella and sharp cheddar on crunchy sourdough bread. Cooked to golden perfection and customizable with jalapeños or pickles, it's sure to satisfy your cravings!

Ingredients
  

2 slices of sourdough bread

1 cup cooked and shredded chicken breast

1/4 cup barbecue sauce (your choice of flavor)

1/2 cup shredded sharp cheddar cheese

1/2 cup mozzarella cheese

1 tablespoon olive oil or butter

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Optional: sliced jalapeños or pickles for extra kick

Instructions
 

In a mixing bowl, combine the shredded chicken with barbecue sauce, garlic powder, and onion powder. Stir well to coat the chicken thoroughly.

    Heat a skillet over medium heat and add the olive oil or butter.

      Place one slice of sourdough bread in the skillet. Layer half of the cheddar cheese and all of the mozzarella cheese on the bread slice.

        Spoon the BBQ chicken mixture on top of the cheese layer, spreading it evenly.

          Sprinkle the remaining cheddar cheese on top of the chicken.

            Top with the second slice of sourdough bread to make a sandwich.

              Cook for about 3-5 minutes, or until the bottom slice is golden brown and the cheese starts to melt. Carefully flip the sandwich and cook the other side for another 3-5 minutes until golden and crispy.

                Once both sides of the sandwich are golden brown and the cheese is fully melted, remove from the skillet.

                  Let it cool for a minute, slice in half, and serve warm. Add sliced jalapeños or pickles if desired for extra flavor!
