Ingredients

1 cup pearl barley

4 cups water or vegetable broth

1 cup milk (dairy or plant-based)

1 tablespoon honey or maple syrup (optional)

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon vanilla extract

Fresh or dried fruits (like bananas, berries, or raisins) for topping

Handful of nuts or seeds (like almonds, walnuts, or chia seeds) for garnish

Instructions

Rinse the pearl barley under cold water in a fine-mesh strainer to remove any debris.

In a medium-sized saucepan, combine the rinsed barley and water or broth. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes until the barley is tender but still chewy. Stir occasionally to prevent sticking.

Once cooked, add in the milk, salt, honey or maple syrup, cinnamon, and vanilla extract. Stir well to combine.

Increase the heat to medium and cook for an additional 5-10 minutes until the mixture is creamy and heated through. Adjust the consistency with more milk or water if desired.

Serve the porridge warm, topped with your choice of fresh or dried fruits, and a sprinkle of nuts or seeds for added texture and nutrition.
