1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for spice preference)

1 teaspoon lime juice

1 teaspoon honey

For the Chicken:

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup corn starch

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon black pepper

2 eggs, beaten

1 cup panko breadcrumbs

Vegetable oil for frying

For the Bowls:

4 cups cooked jasmine rice or cauliflower rice

1 cup shredded carrots

1 cup sliced cucumber

1 red bell pepper, thinly sliced

1 avocado, sliced

1/4 cup chopped green onions

Sesame seeds for garnish

Fresh cilantro for garnish

Lime wedges for serving

Prepare the Bang Bang Sauce: In a medium bowl, combine mayonnaise, sweet chili sauce, Sriracha, lime juice, honey, and a pinch of salt. Stir well until smooth and set aside.

    Prepare the Chicken: In a mixing bowl, combine corn starch, garlic powder, paprika, and black pepper. In another bowl, place the beaten eggs, and in a third bowl, add the panko breadcrumbs.

      Coat the Chicken: Dip each piece of chicken first into the corn starch mixture, then into the beaten eggs, and finally coat it with panko breadcrumbs. Ensure that the chicken pieces are evenly coated.

        Fry the Chicken: In a large skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken pieces in batches.
