1 lb boneless, skinless chicken breasts

1 cup cornstarch

2 large eggs

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper, to taste

Vegetable oil, for frying

1 cup cooked jasmine rice

1 cup shredded cabbage (green or purple)

1 avocado, sliced

1/2 cup scallions, chopped

Sesame seeds, for garnish

Fresh cilantro, for garnish

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1-2 tbsp sriracha (adjust to your spice preference)

1 tbsp lime juice

Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.

    Prepare the Chicken: Cut the chicken breasts into bite-sized pieces. In three separate bowls, set up your breading station:

      - Bowl 1: Cornstarch seasoned with salt, pepper, garlic powder, onion powder, and paprika.

        - Bowl 2: Beat the eggs until smooth.

          - Bowl 3: Panko breadcrumbs mixed with a pinch of salt.

            Coat the Chicken:

              - Dredge each piece of chicken in the cornstarch mixture, shaking off excess.
