1 lb boneless, skinless chicken thighs

2 tablespoons cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons vegetable oil

1 cup cooked jasmine rice

1 cup shredded red cabbage

1 cup shredded carrots

½ cup sliced cucumber

¼ cup green onions, chopped

¼ cup fresh cilantro, chopped

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

Juice of 1 lime

Sesame seeds for garnish

Marinate Chicken: In a bowl, combine the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper. Let it marinate for at least 30 minutes.

    Coat Chicken: After marinating, sprinkle cornstarch over the chicken thighs, ensuring they're well coated.

      Cook Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken and cook for about 5-7 minutes on each side or until golden brown and fully cooked. Remove from the skillet and slice into strips.

        Prepare Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the spice level by adding more sriracha if desired.

          Assemble Bowls: In serving bowls, start with a base of jasmine rice. Top with sliced chicken, shredded cabbage, carrots, cucumber, and green onions.
